How to find Freshness of egg...?
As with any food, the fresher the better.  Better for taste and better for nutrition.

Fresh eggs separate better in yellow part and white part.  A nice, perky yolk can be separated easily with your hands without a single drop mixing in with the white to ruin your macaroons!
Finally, fresh eggs are so much easier to poach.  Fresh eggs have tighter whites as well as yolks that retain their shape better as they cook.  So if Eggs Benedict is your thing you will want to ensure that your eggs are as fresh as possible.

The Float Test for Fresh Eggs

To test the freshness of your egg, carefully place the egg in a cup of water.  Fresh eggs will sink and remain flat lengthwise at the bottom of the cup.
The older the egg, the more likely it is to completely float.  Semi-fresh eggs will stand up on one end and not lie flat at the bottom. This is because an air pocket in the fat portion of the egg increases in size the older an egg gets.
Eggs are rich in several nutrients that promote heart health such as betaine and choline.
During pregnancy and breast feeding, an adequate supply of choline is particularly important, since choline is essential for normal brain development. If you are eating eggs during pregnancy however, ensure you cook until the whites and yolks are solid.
In traditional Chinese medicine, eggs are recommended to strengthen the blood and increase energy by enhancing digestive and kidney function.
Eggs also contain more Vitamin D, which helps to protect bones, preventing osteoporosis and rickets. And they are filling too.
Eggs for breakfast could help with weight loss as the high protein content makes us feel fuller for longer. Eggs should be included as part of a varied and balanced diet.
